Beef Platter: The Cuisine Worth Everything

Grilled burgers, seared steaks, spicy tacos, robust chilli, tender pot roast, and the list goes on. Is your mouth watering yet? There are so many ways to cook delectable red meat that the list seems endless. Not only that, there are so many varieties of meat cuts that it can be hard to tell which one works best for which dish.

 
Here are two dishes that are ideal for those evenings when friends and family gather to eat, drink, and be merry. Better yet, have your guests help out in the kitchen while enjoying each other's company.

The Ultimate Grilled Steak Platter

This is the perfect array of steak that is sure to please all of your guests at a dinner party. Create a centrepiece of fillets using choice meats of porterhouse, filet mignon, and rib-eye steaks that are cooked to perfection with a crunchy crust on the outside and an evenly cooked, rosy red centre.

Salt the steaks well on all sides with kosher salt and let rest at room temperature for up to on hour. Rub the steaks with canola oil. Sear the steaks on a grill, turning them at 30-second intervals for a total of 4 to 5 minutes. Place the seared steaks into a preheated 350-degree oven for 10 to 25 minutes (depending on size). Finally, return the steaks to the grill on high heat and sear for 30-second intervals until deeply browned and crusted.

Once you have removed the steaks from the grill, allow them to rest for about 10 minutes. Cut the meat thickly in a crosswise manner. Place the sliced meat onto a cutting board and drizzle with olive oil and a sprinkling of sea salt. The platter can be served with bearnaise or horseradish sauce. You now have a centrepiece of delectable meat that your guests can sample.

Tips:

The tip for creating a good crust is to pat the steaks dry and chill them in the open air of the refrigerator one day before cooking.

Rather than grilling the steaks over indirect heat, give them a good sear and then pop them into the oven and roast them for the remainder of their cooking time.

Spicy Beef Platter

A middle eastern-inspired party dish for those guests who like it spicy. Start by browning ground beef, minced garlic, and sliced white bottoms of scallions in a skillet. Now comes the kicker. Ras el hanout, a Moroccan spice blend, is an Arabic phrase that means ‘head of the shop’. This top-shelf spice blend contains cumin, cinnamon, coriander, allspice, ginger, black pepper, and salt as well as a variety of other spices. Add the Ras el hanout blend to the meat and set aside.

In a bowl, combine cucumbers, tomatoes, radishes, lemon juice, and lemon zest. Drizzle with olive oil, season with salt and pepper, and lightly toss. Place the meat mixture, salad, hummus, and a plate of toasted pitas in the centre of the table for plating.
